About Miles James

Chef/Owner Miles James is a Seattle-area native originally from Bainbridge Island with a long culinary career cooking with the likes of Daisley Gordon, Ethan Stowell and Tyler Palagi, as well as at the famed Gramercy Tavern in New York.

James has a passion and keen interest in knowing where his food comes from. It's of utmost importance to use the whole animal and make tasty things out of it. From this he defined his personal mission - to treat animals and meat correctly and to be proud of where they have been raised.
